APRICOT OATMEAL BARS
28 grams protein powder
1/2 cup unsweetened applesauce
1/2 cup low fat yogurt
2 eggs
2 tsp cinnamon
1/2 cup brown sugar
2 1/2 cups oatmeal
4 apricots, cut into bite sized pieces
Preheat oven to 350 degrees. Prepare 9X9 pan by lining with parchment paper, or spraying with pam. Mix all ingredients together. Spread in pan. Bake for 30-35 minutes.
Cut into 9 servings. These bars have about 150 calories each, 3 grams fat, 27 grams carbs, 3 grams fiber, 8 grams protein, 54 grams sodium.. They are absolutely delicious as a dessert with a bit of lite cool whip or lite whipped cream on top.

Debby – these sound yummy! I have some dried apricots, so I might need to do some fiddling.

Hi Lori–Let me know what you think. I have tried baking w/dried apricots, and found that they didn’t have much flavor, or the flavor was very subtle…
