BBQ CHICKEN PIZZA
Preheat oven to 400 degrees. Use Flatout* flat bread for the crust. Bake or toast for 3 minutes. Turn crust over.
On med. high heat, pre-cook bite sized chunks of summer or zucchini squash and onion. I used 2 tiny summer squash and 2 thin slices of onion.
Combine 1 Tbsp approx. bbq sauce and 1/2 tsp crushed garlic and spread around crust. Spread veggies over crust, add 1 finely sliced mushroom, 1 oz pre-cooked chicken, and one lite string cheese, peeled into ’strings.’ put back in oven (I do this in my toaster oven) and bake for another 5 minutes or so.
This whole pizza should be about 3 points.
*I have found Flatout in both Safeway and Raleys, but it is in the deli department. It comes in a variety of flavors. Great taste and shape for wraps too.
