HAM AND CHEESE BREAKFAST MUFFINS

 Preheat oven to 400 degrees.

 

2/3 cup low-fat cottage cheese

2 whole eggs

4 egg whites

3 Tbsp water

 

Using a whisk, mix these ingredients well.  Add and mix:

1/4 cup whole wheat flour

2/3 cup oatmeal

1 tsp baking powder

1/4 tsp salt

1/2 Tbsp splenda

 

Gently stir in:

1/4 cup finely diced lean ham

1/2 cup diced or shredded low fat cheddar

2 Tbsp finely sliced green onions

Spray muffin cups with non-stick spray, and divide batter between 8 muffin cups.  Bake 25 minutes.  Each muffin is 2 w.w. points.  Scrumptious!
