SKILLET SCRAMBLE
Ingredients:
1 slice sweet onion, chopped
1 mushroom sliced and chopped
handful fresh spinach, chopped
1 ounce lean cooked ham, chopped
3 ounces cooked potato, chopped
1/2 cup egg beaters
1 tsp olive oil
salt and pepper to taste
Use a med. size frying pan. Spray with Pam over med. high heat. Add onions and cook at least 5 minutes. Add the olive oil, and the potatoes. Add salt and pepper. Allow the potatoes to cook at least 3-4 minutes without moving them, this allows them to brown. Flip potatoes and cook another 3-4 min. Turn down the heat to medium. Add the mushrooms and ham, cook a bit, then add the fresh spinach and cook until wilted. Turn down the heat to med. low, and add egg beaters, cook until desired done-ness.
You could vary the veggies, meat and spices in this to make it a million different ways.
